Hungry Monday

Ok that rhymes if you say it like my Dad's family from Kentucky (mundy).  This time of year always makes me want warm comfort food and even though I'm eating Jenny Craig food primarily I always love a good crock pot recipe.  So please share your yummy and healthy crock pot recipe with me.  I'll love you forever.

I don't do a ton of things in the crockpot but recently I made turkey chili and it was amazing and good for you! Took ground turkey, kidney beans, tomato juice, onion and some chili powder and bam you have deliciousness!
Or I made my own refried beans too (don't know the recipe off hand but its easy as pie), super easy and super good for you, either eat them just plain, throw some in a shell.
I am going to buy a bigger crock pot and start making more meals that way, I just have a smaller one so that's why I never use it.

I am new at the crock pot. I have recently made two recipes with rice. IT WAS DISGUSTING! Just checking to see if I am the only one.
No more rice in this chic's crock pot.

OMG! Love my crock pot! I just made Chicken Tortilla Soup last week.

OK, put in 4 frozen, yes frozen, chicken breasts, about 1 green pepper chopped up, and a small onion chopped, 1 can diced tomatoes with green chiles including juice, 1-2 cups salsa. Then add taco seasoning, or you can make your own seasoning. I also add a few jalepenos for extra spice. The let that cook on low for 6-8 hours. Now, when it's done, you can take the chicken out, shred, and put it back in and use it as taco/burrito/whatever meat. Or you can dump in about 3 can's low sodium chicken broth and make soup. I also add corn and black beans when I add the broth. So simple!!! And it does have a little high sodium, but if you use mostly low sodium products, I think you'll be fine. Enjoy!
